Ingredients

  • 1 can Jamaican Ackee (drained)
  • 250g saltfish (soaked and boiled)
  • 4 rashers bacon (diced and fried)
  • 1 large onion (chopped)
  • 2 tbsp butter or margarine
  • 1 stalk shallot (finely chopped)
  • ¼ tsp black pepper

Direction

  • Sauté onion and shallot in butter.
  • Add saltfish and bacon.
  • Gently fold in ackee and season with pepper.
  • Simmer on low heat for 5 minutes, taking care not to mash the ackee.
